I am a mother of 5 wonderful children and wife to one amazing Navy man. I am always changing things in my life, constantly learning something new and trying it out. I am a wannabe vegan, minimalist and currently living full time in an RV. Just for clarification, I say wannabe, because I know I am not perfect, but each day I strive to do the best I can. That's all I can expect from anyone no matter where they are in life. I learn something new everyday...mostly about myself and my little corner of reality. Life, to me, is loving, learning and making memories. These are better than all the tangible riches one can get their hands on! Besides, there will come a day when all I have left is my love and memories...so I'll stockpile as much of those as I can!
Honey Granola

This is my kiddos favorite breakfast cereal. They eat it right up and it seems like I can't make it fast enough for them. It is super easy and inexpensive. Definitely cheaper than commercial cereals and much better for them I am sure. It is also very quick which is pretty important to me as I never seem to have enough time in my day. I make a large batch for my large crew, but you could slim it down to suit your family if you like.

8 cups whole rolled oats (not quick oats)
1 stick butter (I prefer butter, but you can substitute margarine)
2/3 cup honey
1/4 tsp salt (optional)
cinnamon to taste
vanilla to taste

Preheat oven to 375°

Melt butter in large pot. Pour in honey, salt, vanilla and cinnamon and stir until well combined. Slowly add oats stirring well as you do to evenly coat all oats.
Empty coated oats onto a cookie sheet and spread evenly. Cook in oven for 10-15 minutes and remove. Stir oats around pan and place back in oven for 5-10 more minutes. Remove and let it cool right on the pan. Once cool put in an air tight container or ziplock baggie. Serve with milk, plain or vanilla yogurt.

Optionals to add:
chocolate chips (favorite at my house)
raisins
nuts of any sort
yogurt
or anything else that you can think of ;-)
